Some other foods, like pasta, potatoes and rice, might not seem to be high-sugar foods, but they break down into glucose quickly in the body, and glucose triggers the production of insulin. Fresh fruits and green vegetables also have sugar, but it metabolizes much more slowly, so that the insulin production doesn’t spike.
